What is it?
If you believe pasta deserves more than a jar of sauce and a microwave, Sugo is your kind of place. This Glasgow institution is devoted entirely to the art of handmade pasta and it does so with bold flavours, regional integrity, and serious respect for Italy’s culinary roots.
Each dish celebrates a specific part of the country, from Ligurian pesto to Calabrian spice, served in a space that’s buzzy, relaxed and always welcoming. There are no gimmicks here just great ingredients, properly cooked, and served with pride.
Where is it?
You’ll find Sugo on Mitchell Street in Glasgow’s city centre, a short walk from Native Glasgow and just off the bustle of Buchanan Street. The location makes it a perfect stop for dinner after a day of sightseeing or shopping, whether you’re solo, on a date, or out with friends.
Inside, the open kitchen and stripped-back interiors reflect the restaurant’s ethos: no fuss, just focus on the food. Expect a lively atmosphere, with tables turning quickly but never rushed.
What you’ll find
The menu is simple but deeply considered, usually around ten pasta dishes, each representing a different region of Italy. Think orecchiette with ’nduja from Puglia, or tagliatelle with beef shin ragu from Emilia-Romagna. There are also a few well-chosen sides and desserts, like crispy focaccia and a decadent panna cotta, but it’s the pasta that rightfully takes centre stage.
Everything is made fresh daily, and it shows. The pasta is perfectly al dente, the sauces are layered and balanced, and the plating is unfussy, just a generous bowl of something delicious, brought straight to your table.
What sets Sugo apart is its authenticity. This isn’t a reinterpretation or a modern twist. It’s traditional Italian cooking done properly, using top-quality produce and a lot of care. It’s also excellent value, no small thing in a city centre.
One-liner
Handmade pasta, straight from Italy’s regions to Glasgow’s heart.
Our top pick
The spinach and ricotta ravioli with sage butter (Lazio), soft pillows of pasta, gently dressed, and impossible not to finish.
